Caitlin's Macaroni and Cheese

Ingredients
- 1 1/4 pounds of Super Sharp Cheddar Cheese (block)
- 1 quart of half & half
- 1 16oz box of macaroni (elbows or shells)
- 1/4 pound of butter
- 1/2 cup of flour

- 15 - 20 Ritz crackers crushed in a zip lock bag
- 1 cup of finely chopped onion
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of paprika
Directions
- Melt butter in medium size sauce pan on med-low heat
- Add chopped onion to melted butter
- Add salt and pepper to mixture
- Cook onion until tender
- Shred cheddar cheese
- Add flour to butter & onion mix. Stir and remove from heat.
- Pour half & half into butter & onion mix. Stir thoroughly and return to heat at medium temperature setting
- Bring large pot of water to a boil and add macaroni. Cook for 10 minutes & drain.
- Slowly add shredded cheese to sauce. Stir constantly. Mixture should be thick and creamy by the time macaroni completes cooking.
- Pour macaroni in large baking dish. Add cheese sauce. Stir mixture thoroughly.
- Sprinkle crushed crackers over mixture to make a thin crust.
- Sprinkle paprika over top of crust.
- Bake in preheated oven for 25 minutes at 325 degrees.
