Mincemeat Cookies
Ingredients:
- 1 cup shortening
- 1-1/2 cups sugar
- 3 eggs
- 3 cups unsifted flour
- 1 tablespoon baking soda
- 1/2 teaspoon salt
- 1 (9 oz.) package None Such® Condensed Mincemeat, crumbled
Preparation:
- Preheat oven to 375°.

- In large mixer bowl, beat shortening and sugar until fluffy.
- Add eggs and beat well.
- Stir together dry ingredients and gradually add shortening to mixture.
- Mix well.
- Stir in mincemeat.
- Drop by rounded teaspoonfuls, 2 inches apart onto greased baking sheets.
- Bake 8 to 10 minutes or until lightly browned.
- Let cool.
- Frost if desired.
Tip: For a more cake-like cookie, substitute 1-1/3 cups (one half 27 oz. jar) None Such® Ready-To-Use Mincemeat (Classic Original or Brandy & Rum) for condensed mincemeat.
